Vinn Manje Vandredi

Hi all,
Per usual, Fridays is Come Eat Fridays.  I will share a Haitian dish and the general recipe and process to cook it.  Today's dish is Salad Kenskof.  It is a very simple yet filling meal.  Quick and easy peasy.

You will need potatoes, carrots, onions, crescents, cabbage, condensed milk, butter, salt, garlic, black pepper, 1/3 vinegar, mayonnaise, red peppers, scotch bonnet peppers

Peel potatoes in water.  Slice potatoes, carrots, onions and cabbage separately with grater.  Peel and mince garlic. Mix with vinegar and pour over potatoes. Pour condensed milk, mayonnaise and butter into a wok or deep pan.  Mix in shredded potatoes add salt to taste.  Once cooked, top with shredded onions (optional) and red peppers.  Now on to the second part.  Mix cabbage and carrots with vinegar, salt, scotch bonnet pepper.  Rinse crescents.  Arrange cabbage and carrots in center of bowl and fix crescents around it.  All done!







Do not overcook potatoes

Rinse well

Voila!
